San Isidro

The softest of our cheeses, due to its higher cow's milk content and with a minimum 10% of Sheep.
It can be found in two types depending on its cure in our wood dryer, Semicured (from 2 to 4 months of cure) and Cured (from 4 to 6 months of cure)
