Founded in 1.951 by Francisco Martín Laredo, in the town of Torrelaguna (Madrid), where he began his career as a cheese master making sheep cheese. Due to the growing demand, in 1.975 the production moves to the heart of Castilla y León, in Medina del Campo (Valladolid), due to the richness and quality of milk in this area.
From then until today, El Gran Cardenal produces a range of cheeses that enjoy great prestige and recognition in the market, which has made our products are found in most supermarkets, hypermarkets and in a large number of specialized stores throughout Spain, as well as more and more countries.
Our cheeses are made only with milk from nearby livestock, in Castilla y León, our plateau, full of flocks of sheep grazing freely, has very particular characteristics, both for its continental Mediterranean climate and for its diverse vegetation and extension.
Matured slowly in a wood dryer, turning one by one, the 365 days of the year. It has a differentiated finish with striated bark. Made with a mixture rich in sheep's milk, typical of the area, where 85% of sheep's milk from all over Spain is obtained.
Protected by the "Queso Castellano" quality brand for which strict factory and product audits are required to comply with the regulations. The Great Cardinal has been the first cheese industry that began to label this badge.
